GH-37414: [Release][CI] Update references to wrong apache-arrow Homebrew formula path (#37415)

### Rationale for this change

There are currently some references to the wrong homebrew-core arrow and arrow-glib formula paths.

### What changes are included in this PR?

Changing to the correct path.

### Are these changes tested?

The `post-04-ruby.sh` script has been used locally for the post release tasks. The other changes via archery.

### Are there any user-facing changes?
