ARROW-6834: [C++][TRIAGE] Pin gtest version 1.8.1 to unblock Appveyor builds

Let's leave the JIRA issue open until we can see if the project can be upgraded to googletest 1.10.0

Closes #5614 from wesm/ARROW-6834 and squashes the following commits:

2e84f18c4 <Wes McKinney> Pin gtest version until issue is resolved
